I really have to highly recommend the Satoyama cuisine. The Satoyama cuisine at Hinanoyado Chitose is really full of ritual! The ingredients for the dishes are all made from fresh local ingredients from Niigata. The essence of the dishes is to retain the original flavor of the food. Each small and exquisite dish is very delicate. The most anticipated part of the whole dinner is the very famous "pork in soup" here! Its cooking method is very special: soak the pork in the 63-68 degree hot spring of Songzhishan Hot Spring, and cook it at low temperature for 2 hours using the heat of the hot spring. The pork will turn into a light pink color at this time. Without high temperature cooking, the fresh and tender taste of the meat is retained to the greatest extent. The whole piece of unseasoned meat is pushed to the table by the chef, and then sliced and distributed to everyone in a very ceremonial manner. When eating, dip it in a little local salt and specially prepared sauce, and pair it with steamed rice made from Niigata's specialty "Koshihikari rice". It is absolutely delicious! In addition to this meat, the Tanada hot pot is also not to be missed! The thick soup base, simmered with fresh mushrooms and vegetables from the mountains over low heat, tastes delicious.
